Spicy and Sweet....


Kang Keaw Wan


The next recipe that I would like to show you is Kang Keaw Wan.  Our Thai dish which is famous in Thailand. The name of  this food means curry which has sweet taste with green color, but it is not sweet like its name at all (it is spicy). There are various kinds of  food that can eat with Kang Keaw Wan such as spaghetti , Pizza, Fried rice, etc. Especially Roti my favorite one :)
  

This is my father's recipe which I think it is very tasty and easy to cook. So, I want to share this recipe to all of you.  I think it is very good idea that added some vegetables such as string beans, pumpkins, and carrots because they makes Kang Keaw Wan colorful and delicious.  I think these vegetables gave more textures when you eating it with warm rice.  So, if you want to try some, or (you love to eat vegetables like me ) you just following my blog and do it at your home.

 The Recipe :D

  1. 300 g Sliced Chicken breast fillets or any kind of meat sea food, beef, pork,etc.
  2. 3 Cup coconut milk
  3. 50 g Picked pea eggplant
  4. 3-4 green eggplants (cut it into quarter )
  5. ½ cup Hand picked basil leaves
  6. 1 slice of pumpkin  (cut it into square shape just like in the picture )
  7. 2-3  string beans (Cut it into pieces just like in the picture.)

(for quick and easy way should use an instant curry paste)

Ingredients for green curry paste

200-300 g Instant green curry paste
3 Finely sliced lemongrass
3 Finely sliced fingerroot
5-6 Sliced galangaes
7-9 Chili
3-4 Basil flower

Seasoning

2 Tbp.  sugar
2-3 Tbp. fish sauce


Let's cooking :)
  1. Heat up the pan in a medium heat and pour coconut milk.  Then add curry paste in the pan stir for 2 minutes and wait it until the coconut float up during boiling.
  2.  Add the sliced chicken breast and stir it well until it done.
  3. When the curry is boiling, add green eggplants, string beans, some picked pea eggplant, and pumpkin. Then stir them softly until everything cooked and tender.
  4. Seasoning with sugar and fish sauce. Add 3 sliced of red chilli and some basil.
  5. Turn the heat off and serve it hot with warm rice, Roti, and rice noodle.


Tips and Tricks
  1. If you want to eat it more delicious, you have to  squeeze coconut milk by yourself. It is very important that the coconut must be fresh, but if you do not mind or you can not find any coconut.  You can use pasteurized coconut milk.
  2. When you cut green eggplant into quarter, you should put them in a bowl of water to avoid they change color.
  3. When you boil pumpkin  do not stir it often.  (If you don't want to eat pumpkin soup) :P
  4. If you want to decorate this food you can cut the pumpkin into star shapes to make your  curry more beautiful. :)

In short, I think this curry is OK for everyone, but if you concern about your shape and have a health problem  (heart disease, high blood pressure, etc. ), you should not eat it too much and should do some exercises because this curry contains a lot of calories. Anyway, if you are not worried about anything, go ahead and enjoy it. :D
